Not sure if summer is here yet. Seattle can get really dreary, dark and gloomy and we simply cannot find enough good weather days during the 9 months of fall, winter and spring. These couple of days, the weather is lightening up and yet it is still lovely and cold day. Let’s just say these days are my favorite but I definitely always want hot food since I really get cold easily.

One of the dish that I had been experimenting is this Paleo chili stew. Made from lean beef and cooked without beans. It is really quite tasty and satisfying, except that I am still trying to find the best cut of meat. I think the stew beef may not be the best cut. I think chuck roast cut up into chunks will really be my recommendation. 🙂 Try it and let me know what you think.

Here comes the cold winter and spring. As much as I miss barbecuing, I have to say, I miss my hot pot dinners a lot. During the summer months, it can be quite unbearable (for Mark) to eat anything that is hot in temperature. Now in the winter, he loves and craves it.

This is one of our favorite meals because it is easy to cook, packs a great punch, makes great leftovers, can use up many leftover ingredients in the house and can be eaten in multiple ways. Normally when I cook up this dish, I will cook a really big pot and during the cooking process, turn on my favorite movie as I cut up all the different vegetables.

Paleo Shepherd’s Pie

Mark is from England and loves his meat and potato, especially potato I may add. It would be baked potato, mash potato, fries, etc. Shepherd’s pie is a dish that Mark will eat frequently growing up and so he is always thinking about it whenever we go out to restaurants to eat. While we were doing the 30 day challenge, we completely avoid potato because it generally have the ability to cause us to be lethargic after eating it. Currently Mark had reintroduced this slowly back into his diet, but only after he lifts in order to provide energy needed after lifting.

As a way to compensate Mark’s desire for his growing up meals, we searched multiple recipes and finally perfected this dish that still hits the taste bud while giving him a strong link back to his childhood. Note, the top of this dish is literally just a simple garlic cauliflower mash.

Lunch is tough for Mark. He is a picky lunch eater because he does not like to reheat food for lunch at work and since we had gone paleo, his options were reduced dramatically since he also does not eat a lot of salad. One of the things he does seem to like is roast beef in wraps.

On Saturday, we normally start the day working out and then go for weekly grocery shopping. Then we will proceed to eat lunch and prepare food for the week. We do not have anything else in the fridge, so when we got home, we really just want to eat immediately.

One of the most challenging things for us, is that we are always hungry after we work out. I guess we should have a post work out recovery shake with us, but we rarely do. On a weekend, the hunger does unimaginable things to us -> It tempts us to go hunt for breakfast food! Therefore we generally enjoy going out to a power breakfast.

Some days we just want to walk through the door to the aroma of a tasty meal awaiting us. The daily work life is already busy and many times we have little energy to cook when we come home. Mark and I crossfit from 6:30pm – 7:30pm on Tuesday, Wednesday, Thursday. During the drive home is when we are the most vulnerable. Whenever we have a slow cooker meal waiting for us, our resolve is strong and we will resist eating out unnecessarily (thus blowing our workout and also our budget).
