Not sure if summer is here yet. Seattle can get really dreary, dark and gloomy and we simply cannot find enough good weather days during the 9 months of fall, winter and spring. These couple of days, the weather is lightening up and yet it is still lovely and cold day. Let’s just say these days are my favorite but I definitely always want hot food since I really get cold easily.

One of the dish that I had been experimenting is this Paleo chili stew. Made from lean beef and cooked without beans. It is really quite tasty and satisfying, except that I am still trying to find the best cut of meat. I think the stew beef may not be the best cut. I think chuck roast cut up into chunks will really be my recommendation. 🙂 Try it and let me know what you think.

Tasty paleo, gluten free paleo chili is a tasty dish that can be modified for your liking depending if the level of spice you like!
  • 2 pounds of stew beef
  • 3 cups of chicken broth
  • 1 can of 28oz crushed tomato - fire roasted is my favorite.
  • 1 can of 14oz tomato sauce
  • 1 large onion diced
  • 6-8 cloves of garlic diced
  • 1 teaspoon of garlic powder
  • 1 teaspoon. of oregano
  • 1 teaspoon of garlic power
  • 1 teaspoon of black pepper
  • 2 bay leaf
  • 2 teaspoon of cumin
  • 1 teaspoon of salt
  • ½ tsp. of cayenne pepper
  1. Dice up all vegetables.
  2. Layer the stew beef on the bottom of the crock pot.
  3. Assemble all the ingredients into the pot.
  4. Stir and set it on low for 8-10 hours before leaving for work! (longer is also ok)
  5. Enjoy!
