Starting a new job, moving to a new home and then renovating our house had definitely taken a toil on our healthy eating. Not to say we are currently expecting our first baby, things have gotten a little more interesting because I am constantly feeling tired and whenever I have the opportunity, I will try to get some nap time.
We are back onto the paleo challenge (more to do a yearly clean up) and will be trying to behave for the next 30 days. There is something strange about being restricted, when you know things are off limits, there is a certain level of attractiveness to the food that one had been swore off! I normally do not care too much about chocolates, but recently I have been dying for chocolates. Of course, since they are off limits, I wondered up and down the aisle to find something tasty in Whole Foods to meet the craving.
This dish is a modification of Mexican Chocolate coffee cake by Sarah Ballantyne on the “the Paleo Mum”. I immediately liked how easy this recipe sounded. At this time, I am trying to get more dessert dishes under my belt to satisfying the sweet tooth craving of my better half.
Weekend is here and part of the weekend is about food. I firmly believe that because we have more time over the weekend, we stomp around the house more and crave more sweet hits ~ these were the words of Mark. He prowled around the house like a hungry wolf after I feed him a tasty satisfying meal…..he claimed he is full at dinner….but always have space for desert. In fact, he demands desert.
Friday is movie night in our house. Our routine is generally eating leftovers and watching a movie on Friday. We do our groceries on Saturday and deplete our munchies from Monday through Thursday. So when Friday comes into the picture, we feel that we need to stop into the supermarket for a run. This is especially since Mark needs desserts.
Today (a Friday) is no different …
Pancakes are really simple and good tasting breakfast, lunch and dinner food 🙂 but since we have gone paleo, we have not been able to find a good substitute. Almond meal pancakes just do not taste the same. In fact, I consider them gritty and difficult to eat.
