12 pipping hot chocolate chip muffin – paleo friendly!

Dangerous days when you cannot bake – my muffin pans were all packed and I had not unpacked them until today. As a result, we had been getting getting conventional cakes / treats while our kitchen was being renovated. They taste great while eating and yet we always feel it an hour later and definitely the next day.

Finally unpacked my pans and on a overcast Sunday in Seattle, baked my first batch of fall paleo chocolate chip muffins. Absolutely smelling good now as the aroma fills the house. This will get me going as I prepare the rest of the meals for this week. By the way, there is a little secret in this recipe, it contains pumpkin and is actually somewhat healthy(or at least I self rationalized). 🙂 I am not telling!

We are back onto the paleo challenge (more to do a yearly clean up) and will be trying to behave for the next 30 days. There is something strange about being restricted, when you know things are off limits, there is a certain level of attractiveness to the food that one had been swore off! I normally do not care too much about chocolates, but recently I have been dying for chocolates. Of course, since they are off limits, I wondered up and down the aisle to find something tasty in Whole Foods to meet the craving.

I have to say that it is rare that something meets a specific good diet and is tasty. This weekend on the grocery trip, I happen to come by a tower of almond milk in Whole foods and beside it are many packets of Primal Island cereals. What is interesting is how mainstream “PALEO” is becoming. The marketing for this packet of cereal is towards paleo diets! Wow!!!! How great is this?

Not sure if summer is here yet. Seattle can get really dreary, dark and gloomy and we simply cannot find enough good weather days during the 9 months of fall, winter and spring. These couple of days, the weather is lightening up and yet it is still lovely and cold day. Let’s just say these days are my favorite but I definitely always want hot food since I really get cold easily.

One of the dish that I had been experimenting is this Paleo chili stew. Made from lean beef and cooked without beans. It is really quite tasty and satisfying, except that I am still trying to find the best cut of meat. I think the stew beef may not be the best cut. I think chuck roast cut up into chunks will really be my recommendation. 🙂 Try it and let me know what you think.

It’s always nice to be able to have a bowl of hot soup anytime of the day and also have all the ingredients on hand. Even nicer is how warm and toasty it makes your belly feel :). Today is one of those days on a cold day and I just did not want to cook. Granted, I did plan for dinner to be a roast chicken from the grocery store, but I really did not feel like making the drive through. So my better half just volunteered 🙂 I know, I am lucky.

These couple of days, we had been in a rush and time was a blur because of work and buying a new home. We were in a rush and I did not follow through on the plans for dinner. As we were driving home, the question hits me on what to prepare for dinner since we are both hungry after the workout. I DID NOT want to ask the dreaded question -” What are we having for dinner?”

Lara Bars – Best Paleo Hiking Bars

Lara Bar – Paleo bars from the stores!

Lara bars are what we ate for every hike when we were going on strict paleo 3 years ago. I still remembered that we were training with Boeing Alpine club and every weekend while we were in the mountains hiking, we would have our variety of lara bars. It is the quintessential snack / bar that fills us up and keeps us strong! Thinking back, last year, while we were climbing in the Alps, this was my staple.

This is one of our favorite meals because it is easy to cook, packs a great punch, makes great leftovers, can use up many leftover ingredients in the house and can be eaten in multiple ways. Normally when I cook up this dish, I will cook a really big pot and during the cooking process, turn on my favorite movie as I cut up all the different vegetables.

Weekend is here and part of the weekend is about food. I firmly believe that because we have more time over the weekend, we stomp around the house more and crave more sweet hits ~ these were the words of Mark. He prowled around the house like a hungry wolf after I feed him a tasty satisfying meal…..he claimed he is full at dinner….but always have space for desert. In fact, he demands desert.
